When I was growing up, I didn’t much care for meatloaf. In fact, I hated almost anything that contained hamburger meat, because it never failed that when I was eating it, I’d bite into a big gnarly piece of gristle. No cool, dude. Not cool at all. As I’ve gotten older, I can tolerate ground beef much better now, especially since I’ve found local farmers to buy meat from. The difference between it and store-bought meat is like night and day. If you haven’t found a local farmer to buy grass-fed beef from, you need to look for one. Check out Local Harvest to find farmer’s markets and such in your area!
This is my tweaked Fantastic Meatloaf recipe from the Trim Healthy Mama book. I think it’s Serene’s version, kinda. I’ve changed it a little to meet my family’s need and size. I don’t have as many kids as she does, but I still have a lot compared to most “normal” American families (4).

Here is my plate. It was very satisfying, which is what this meal is meant to be (S). I had a Bubbies Pickle on the side. It has no fat or carbs and is naturally fermented, so it’s perfect!
