Monday January 30th?
Goodness, this month has gone by quickly, hasn’t it? I cannot believe tomorrow is the last day of the month! Sorry I’ve been quiet the last bit. It’s been crazy busy around here. Saturday, I was gone all day to Charlotte, NC for Spring Sprint, which is kind of like a mini-convention for Scentsy. I took Mom with me, and we had a blast! It only took 3 hours to get there and 3 hours back, so we didn’t have to stay in a hotel, which is nice because it saved some money. More money for shopping! Boy, did I do some shopping.
I read on another blog recently about someone church doing a clothing swap of sorts each season. I think this sounds like a great idea! Who wouldn’t love to go get clothes for FREE! You’d just bring in any clothes that no longer fit or that you don’t like, and you can look around for something you DO like or that DOES fit. I think I’ll bring it up soon to the church ladies.
We’re having revival at church this week, and I offered to bring a meal tonight for the evangelist. I think I’m going to do chili and blue cornbread. The cornbread I made last time came out so good, I can’t wait to eat more! I think I’ll make a loaf of bread to take to our Pastor as well. I used to make some for him semi-regularly, but I’ve gotten out of the habit. He’ll be surprised.
Our oldest son received a weather radio for his birthday from 1 set of grandparent, and was less than impressed, which surprised me considering he’s a weather nut. I explained to him that it’s ok to not like a gift, but to not say anything until we’re alone with him or something so that no feelings are hurt. However, he’s warmed up to it and wants to keep the radio. I think it’s pretty cool, it’s AM/FM in addition to being a weather radio. I’d love to get him on the local news with the weather guy, but I’m not sure if they allow that.

Thinking About a Garden
I found some packets of seeds on top of the fridge last week. I bought the seeds last year hoping to get them planted, but all I got planted were cabbage seeds. I kind of forgot about the cabbages, and the weeds overtook them. Oopsie. If my husband can find the time and energy to till, I think the kids and I could work it. I’ve been trying to think of what I want. I definitely want to have potatoes, because we go through them like crazy. I already have some leek seeds, so I want those, and regular onions. Maybe a few tomato plants. I’ve never planted carrots before, that may be nice as well. Oh, and herbs! I love using fresh and dried herbs when I cook. Yum yum. I love having basil especially. I need to branch out with some others as well.
I made the best chicken noodle soup ever last night. Everyone love it! I bought some Amish noodles at the store and used those. They were really yummy. Did you know that if you have a Kitchenaid mixer, or something similar that has the planetary rotation, you can put whole cooked chicken breasts in the bowl and use the paddle attachment to shred the chicken?! I learned this a couple of weeks ago. I’ve used this method at least twice since then, and it works perfectly! I did this for the soup last night, instead of cutting the meat into pieces like I normally do.

Blue Cornbread Recipe with Pics!
Well, I did it. I finally made the blue cornbread that’s been on my mind for so long. It was SO darn tasty, too. It’s the best cornbread I’ve ever tasted, if I do say so myself. 🙂
I ground 2 cups of blue popcorn, which came out to about 2.5 cups of cornmeal (in hindsight, I could have ground it a little more coarse and it would have been ok still).
Isn’t it pretty? It almost looks purple to me, but I assure you it was blue. I’ve never seen purple popcorn before. That would be awesome, would it not?
Ok, after I ground the popcorn, I have to bang on the bowl to get the meal off the sides and stuff. I didn’t have any buttermilk, so I just took about 1.5 cups of milk and added a little vinegar to it to clabber it. I preheated the oven to 400F (I have a convection oven, otherwise I would have done 425F), then I poured the meal into a bowl, followed by 4 Tbs. of baking powder, 2 tsp. of salt, and the clabbered milk. Normally, I use my cast iron skillet to do cornbread, but this time I just used a metal 11 x 7 baking pan. I greased it good with lard so that the bread wouldn’t stick so much. Pour the batter in, bake for 20 minutes, and it’s done!
Yum yum yum. I let it cool a bit, then cut squares of it to have as a side with the potato soup that I made for supper that evening.
Blue Cornbread
2.5 cups of cornmeal
1.5 cups of buttermilk or dairy kefir
4 tsp. baking powder
2 tsp. salt
Preheat oven to 425F (or 400F if using convection oven). Whisk cornmeal, baking powder, and salt in large bowl until fully incorporated. Make well in center of meal, and pour in the buttermilk or kefir. Stir just until combined, do NOT over mix! Pour into greased 11 x 7 pan and bake for 20 minutes, or until done in center. Alternately, you can preheat a well greased 10 inch cast iron skillet, and pour the batter into that, and bake for the same amount of time. Cool about 10 minutes, then cut into and enjoy!
Going to Pizza Hut
My oldest son turns 9 next Thursday! We take the kids to Pizza Hut every year for their Birthday, and normally we’d go on or just after the day, but I’ll be gone to Scentsy Sprint Sprint next Saturday, so we’re going to go today instead. Their chocolate dunkers are to die for! I cannot wait to get my hands on some. It’ll also be nice to not have to cook. I’m not sure if we’re going for lunch or supper, but I’m guessing it’ll be lunch.
I finally made it down to the bulk store yesterday and was able to buy some rye grains and caraway seeds. I think caraway seeds smell pretty nasty, but I’ll try them. I meant to buy some ground cardamom (they didn’t have whole) but I was afraid I’d go over-budget. Does anyone have a fabulous rye bread recipe they’d like to share with me?! Oh! I also bought blue popcorn to grind into cornmeal. I’m super-stoked about that one! I haven’t ground any popcorn yet, so I’m excited to see how that goes.
Speaking of Birthdays, wanna see what we got our son?! A plasma ball! Cool huh? He’s gonna love it!
