Everyone loves fried chicken, don’t they? I don’t think I know anyone who doesn’t. If you don’t like it, don’t tell me. I don’t wanna know.
I got this idea from Living a Bona Fide Life. A friend of mine linked to it, and I HAD to try it. Of course, like some people, I tweaked it to fit my dietary needs. Here’s what I used:
6 chicken breasts (we are a family of 6)
1/2 cup of Buffalo wing sauce (whatever brand you like)
1 tsp paprika
2 tsp salt, or to taste
1 cup flour. I use my gluten free blend, but you can use whatever
1/4 tsp cayenne pepper, optional, but makes it oh so YUMMY
Oil for pan frying
Preheat your oil/skillet over medium high heat. Place chicken in a large bowl and pour the wing sauce over it. Get your hands in there and slather it all over. This stuff is gonna make for a GREAT crunchy breading.
I like to wear disposable vinyl gloves for this. 1 because touching raw chicken makes my hands itch, and 2 because I don’t like touching raw meat. Next sprinkle on the paprika,salt, and cayenne if using and rub it in good. Then, pour the flour over the chicken, making sure each piece is thoroughly coated. Now it’s time for frying! I can fit 3 pieces comfortably in my 10 inch cast iron skillet.
DO NOT overcrowd the pan, you’ll knock the heat down too much and have greasy mushy chicken. Not cool. Fry each breast about 6 minutes or so per side. Be sure to keep watch and adjust the heat as needed. I find with my cast iron I need to turn it down to Medium. After the chicken is cooked thoroughly, remove from skillet and allow to rest on paper towels or a brown paper bag while you fry up the rest. Normally when you fry chicken you want a golden brown. The same goes here, but it’s gonna look sort of orange too because of the wing sauce. Serve with whatever sides you like. We had ours with green beans and yellow rice.
